The reason for this item being discounted is a scratch on the handle, likely from shipping, as shown in the last photo. This is a great value for anyone who doesn't mind this minor imperfection. [Product Description] A Chinese cleaver, often associated with its large rectangular shape and sharp edge... I only list items that I have personally used and found to be excellent. However, I've received many inquiries asking, Do you have a Chinese cleaver? So, I've recently acquired a small quantity and tried it out myself. The first thing I noticed was its substantial weight. This product weighs approximately 340 grams, which is average for a Chinese cleaver, but those holding it for the first time might exclaim, It's heavy! (Especially when compared to the 8-inch chef's knife released simultaneously...) A Chinese cleaver is suitable for all kinds of ingredients, including meat, fish, vegetables, and fruits. Once you get used to the weight, it's said that you can prepare most Chinese dishes with just this one knife, without needing others. When I actually used it, the combination of its weight and the sharpness of the blade was perfect for cutting chicken thighs for karaage, and for slicing napa cabbage and pumpkin! The weight means you don't need to exert much force when cutting ingredients; you can simply let the weight of the knife do the work and slice through smoothly. With a blade length of 18cm and an overall length of 32cm, this type with a slightly curved blade tip is called a cai dao (vegetable knife) and is perfect for home use. It's a double-bevel type that can be used for various cooking tasks, and you can use commercially available sharpeners. I think it's just right for someone new to using a Chinese cleaver. The material used is high-grade stainless steel (molybdenum-vanadium steel, also used in surgical scalpels) which offers both sharpness and long-lasting edge retention, satisfying even professional chefs. It's also resistant to rust, so simply wiping it with a damp cloth is sufficient. The ferrule and blade are welded together, preventing water and food juices from seeping in, ensuring it stays clean at all times. The handle, made of rubber with a beautiful wood grain pattern applied through heat vapor deposition, is non-slip and fits comfortably in your hand, and it doesn't feel cold even in winter. Not only does it boast excellent sharpness, but the blade also features a Damascus pattern finished with laser sanding, allowing you to enjoy its beautiful appearance.
